_Apaneca is a peaceful town of just 8500 people in the Sierra Apaneca
Ilamatepec Mountains about an hour and a half northwest of San Salvador.
It is just 4350 feet above sea level, but the dense flora, steep
mountains packed closely together, cool, misty conditions make it feel
higher.
An association of co-operative farms named UCRAPROBEX operates the
farm. The growers practice organic cultivation and operate under the
following principles: protect biodiversity by means of shade and
associated crops, ecological management of soil through organic
nutrition, the practice of non-chemical pest management, tracking and
certifications to ensure traceability. This coffee is extremely
versatile. Clean, sweet. Makes a great drip as well as a single origin
espresso.
